How to Make Salmon with Garlic and Vegetables

Preparing the Potatoes:

  • Wash the potatoes and slice into 1/4 inch circles. In a Dutch oven or large frying pan add 1 inch of canola oil and heat to 325 degrees. Fry the potato slices on both sides until golden brown (2-3 minutes per side).

Preparing the Green Beans:

  • Wash the green beans and trim both ends of the beans. In a large skillet, bring 2 tablespoons of olive oil to high heat. Next, add 2 cloves of the sliced garlic and sauté on high until golden, about 1-2 minutes.
  • Lower the heat to medium, add in the green beans, and sauté until tender (3-5 minutes), mixing occasionally. Remove green beans to a serving bowl.

Preparing the Salmon:

  • Return the large skillet to high heat and melt 1/4 cup of butter. Add in the remaining 2 cloves of sliced garlic and sauté until golden. Next, add the salmon pieces to the skillet and sear on high heat for 3 minutes on both sides (6 minutes total).

  • 2 6 oz. pieces of salmon
  • 12 oz. green beans
  • ¼ cup butter for salmon
  • 2 medium russet potatoes
  • 4 cloves garlic sliced
  • 2 tbsp. olive oil for green beans

In this salmon with garlic recipe I am using salmon as the main ingredient. However, this easy garlic butter sauce would also work well with shrimp, scallops, chicken, or pork. For chicken and pork I would recommend cutting the meat into bite size pieces then sautéing in the sauce.

You can also mix up which vegetables you use with this salmon with garlic dish. Eggplant, broccoli, cauliflower, and zucchini are all great options.
