Lemon Herb Shrimp. Shrimp sautéed in extra virgin olive oil with oregano, basil, thyme, grape tomatoes, and lemon juice, and served over pasta.

Like most shrimp recipes, this lemon herb shrimp with tomatoes dish, comes together quickly. With a really hot pan the shrimp will cook in a matter of minutes. Be careful not to overcook the shrimp otherwise it can be tough and chewy.

I was not very careful myself and overcooked the shrimp just a bit while testing this recipe. You can see below in the pictures that the shrimp is tightly enclosed. You are looking to have the shrimp just a bit closed, but not fully closed as I did.

I adjusted the cook time for the shrimp to ensure that it does not get overcooked. In my test run the shrimp tasted great, but was just a bit tough. But that did not stop me from enjoying the flavor combination of this recipe!

How to Make Lemon Herb Shrimp

Preparing the Shrimp

  • In a large skillet add the extra virgin olive oil and bring to a high heat.
  • Next, add in the tomatoes and sauté for 2 minutes, mixing occasionally.
  • Next, add in the shrimp, salt, black pepper, oregano, basil, and thyme.

  • Sauté for 2 minutes, mixing occasionally. Finally, add in the lemon juice and sauté for 1 minute while mixing.

  • Serve this lemon herb shrimp over your favorite pasta or with a side of vegetables.

  • 12 jumbo shrimp cleaned or 16 large shrimp
  • 1 pint grape tomatoes or 1 can (15 oz.) diced tomatoes drained
  • 2 tbsp. extra virgin olive oil
  • ¼ tsp. salt
  • pinch black pepper
  • ¼ tsp. dried oregano
  • ¼ tsp. dried basil
  • pinch dried thyme
  • juice of 1 small lemon or 1-2 tbsp. lemon juice

For an even simpler solution, just use Italian seasoning, which will have these herbs with a few others like rosemary and marjoram. I prefer to pick the individual herb, however, the convenience of the Italian seasoning mix needs to be stated. For additional flavor I would recommend adding in some garlic, savory, scallions, or green onions.
I picked grape tomatoes for this recipe because I was serving this lemon herb shrimp over pasta and I wanted the cooked down tomatoes to make a flavorful sauce. Canned diced tomatoes would work equally well if that is what you have on hand. You could also add in a green vegetable like peas, green beans, spinach, chard, or asparagus, for some additional color, flavor, and nutrition.
Shrimp works well in this recipe, however, you could also use scallops, chicken, pork, and fillet of fish with these seasonings.
