Wash the potatoes and slice into 1/4 inch circles. In a dutch oven or large frying pan add 1 inch of canola oil and heat to 325 degrees.

Fry the potato slices on both sides until golden brown (2-3 minutes per side).

Preparing the Green Beans:
Wash the green beans and trim both ends of the beans.

In a large skillet, bring 2 tablespoons of olive oil to high heat. Next, add 2 cloves of the sliced garlic and saute on high until golden, about 1-2 minutes.

Lower the heat to medium, add in the green beans, and sauté until tender (3-5 minutes), mixing occasionally. Remove green beans to a serving bowl.
Preparing the Salmon:
Return the large skillet to high heat and melt 1/4 cup of butter. Add in the remaining 2 cloves of sliced garlic and saute until golden, about 1-2 minutes.

Next, add the salmon pieces to the skillet and sear on high heat for 3 minutes on both sides (6 minutes total).

To Serve:
Place the salmon in the center of a dish and wrap several pieces of potato around the salmon. Place the green beans to one side of the salmon.
