Pasta with Peppers and Zucchini. Sautéed red bell peppers and zucchini in garlic and oil then mixed with penne.

Welcome to the second recipe in our Pasta with Peppers series of recipes. In this version, Pasta with Peppers and Zucchini, we are using zucchini and penne pasta to change up this dish. This recipe is a very subtle change, as the first version of this recipe calls for spaghetti, onions, and diced tomatoes. However, a small change like this really does make a completely different dish and eating experience.

How to Make Pasta with Peppers and Zucchini

Preparing the Pasta

  • Prepare the penne according to the instructions on the package.

Preparing the Vegetables

  • While the penne is cooking, in a large skillet or pot on high heat add 1/4 cup of extra virgin olive oil and the garlic and sauté until golden (about 2 minutes).
  • Lower to medium heat and add in the red peppers, zucchini, salt, and pepper, and sauté for 5 minutes, mixing occasionally.
  • The image below shows you what the vegetables should look like before adding in the pasta.

Bringing the Recipe Together

  • Continuing on medium heat add in the cooked pasta and grated cheese.

  • Cook for 5 minutes, mixing occasionally to incorporate all of the ingredients.

How To Serve Pasta with Peppers and Zucchini

  • Place the pasta with peppers and zucchini in a large serving bowl and sprinkle with more grated cheese.

Ingredients
  

  • 1 lb penne
  • 2 red bell peppers cut into thin strips
  • 2 small zucchinis cut into thin strips
  • 4 cloves of garlic sliced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup grated cheese
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions
 

Preparing the Pasta

  • Prepare the penne according to the instructions on the package.

Peppers and zucchini sauteed in garlic and oil with pasta, what a wonderful meal, and one of my favorites. I have made this recipe with broccoli, peas, Brussels sprouts, green beans, and spinach.
If you would like some more flavor, add in diced tomatoes, marinara sauce, or tomato paste. If you do, add one of those ingredients in after the vegetables have sauteed for 5 minutes and before you add the pasta in to the skillet. Saute everything for about 2 minutes, then add in the pasta and finish the dish as the recipe describes.
