Beef Stir Fry with Peppers, Zucchini, and Carrots. Beef bites sautéed with peppers, zucchini, and carrots and mixed with teriyaki sauce.

For a time savings I recommend prepping the vegetables the on the weekend, or the night before. Cut up all the vegetables and place them in the refrigerator until you are ready to make the dish.

This is a tasty dish with the sweetness of the teriyaki sauce and zucchini and the heartiness of the beef and rice. In this version of the recipe I add the teriyaki sauce during the cooking process.

You can also marinate the beef sirloin overnight, which would require you to prepare the beef sirloin when you are prepping the vegetables.

To marinade the beef sirloins, add the teriyaki sauce and beef sirloin pieces into a plastic bag or bowl. Since this is a marinade, I would recommend adding a few tablespoons or water.

Mix everything together and place in the refrigerator. Preparing the sirloin a head of time will make cooking the dish that much faster. Which is great for busy weeknights.

How to Make Beef Stir Fry with Teriyaki Sauce

Preparing beef:

  • Start by cutting the beef sirloin into bit size pieces. Season beef pieces with salt, pepper, and garlic powder.
  • In a large skillet on high heat sauté beef pieces in ¼ cup of canola oil until golden brown on all sides (about 5 minutes). Remove beef from skillet and drain the oil.

Putting is Together:

  • Return the skillet to high heat and sauté 2 cloves of garlic in 2 tablespoons of extra virgin olive oil until golden brown.
  • Once the garlic begins to turn golden brown, reduce to medium heat and add the sliced peppers, carrots, and zucchini and sauté for 4-3 minutes, mixing occasionally.
  • Next, add 2 tablespoons of stir fry sauce, and return the beef to the skillet. Cooks for 5 minutes (mixing occasionally) until the vegetables soften.

How to Serve Beef Stir Fry

  • To serve this beef stir fry, place in a large serving dish or on top of rice.

Ingredients
  

  • 12 oz. beef sirloin
  • 2 cloves of garlic sliced
  • 2 red bell peppers sliced
  • 2 medium carrots sliced
  • 2 small zucchini sliced
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ½ tsp. garlic powder
  • ¼ cup Canola oil for beef
  • 2 tbsp. extra virgin olive oil or canola oil
  • 2 tbsp. teriyaki sauce
