Zucchini with Tomatoes and Garlic. Fresh zucchini sliced thin and sautéed in extra virgin olive oil with garlic, onions, and tomatoes.

This is such a tasty and filling vegetable. I love to make this recipe frequently as a side dish with dinner during the week because it does not take very long to prepare.

Occasionally, I feature this zucchini with tomatoes and garlic, by serving it over a bed of pasta with some grated cheese sprinkled on top. This option is fantastic because the diced tomatoes, onions, and garlic make for a fantastic pasta sauce. 

When preparing to make this recipe I recommend slicing the zucchini, onions, and garlic on the thin side. It is important to try and cut the zucchini into evenly thin slices, this will make for a more consistent and even cook. If the zucchini slices vary in thickness, they will cook to different tenderness. I have done this before and the thinner slices will fall apart while the thicker slices will remain a bit hard and not very tender.

I usually wash and then leave the skin on the zucchini because I love the way it makes the dish taste and look. You can of course remove the skin if you prefer. If you do that, I recommend reducing the cooking time, otherwise you run the risk of the zucchini falling apart. Just keep and eye on the zucchini as it sautés and maybe cut about 2-3 minutes off of the final 5-8 minutes of cook time after adding in the diced tomatoes.

How to Make Zucchini with Tomatoes

Preparing the Zucchini

  • In a large skillet on high heat add in the oil and garlic and sauté until the garlic is golden (about 2 minutes). Lower to a medium heat and add in the sliced onion and sauté for 2 minutes.

  • Next, add in the zucchini, salt, and pepper, and saute for 5 minutes, mixing occasionally. The below picture shows you what the zucchini looks like when first added to the skillet with the salt and pepper.

  • After sauteing for 5 minutes the zucchini will be a bit more tender. The picture below shows you what the zucchini looks like before I added in the diced tomatoes.

  • Continuing on medium heat, add in the diced tomatoes and saute until the zucchini is tender (about 5-8 minutes), mixing occasionally.

  • While you continue to cook make sure you are mixing occasionally to mix all ingredients and to ensure the zucchini is cooking evenly. The below picture shows you what the zucchini with tomatoes and garlic will look like right before it is done.

How to Serve Zucchini and Tomatoes:

  • Serve this zucchini with tomatoes and garlic recipe as a side dish with chicken, pork, or steak. For a vegetarian option, serve this zucchini over pasta.

Ingredients
  

  • 3 medium zucchinis sliced
  • 1 can 15 oz. diced tomatoes
  • 1 sweet onion sliced
  • 2 cloves of garlic sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
