While the gnocchi are cooking, in a large skillet add the extra virgin olive oil and bring to a high heat. Next, add the garlic, peppers, and onions and sauté for 5 minutes, mixing occasionally.
Continuing on high heat, add the tomatoes, salt, and ground black pepper and sauté and sauté for 5 minutes, mixing occasionally.
Continuing on high heat, add the cooked gnocchi and 4 oz. of starchy water to the vegetables.
Combine well and cook for 2 minutes, mixing occasionally, or until the liquid is reduced and thickened.
Place the gnocchi with peppers and onions in the center of a bowl and spoon over the desired about of sauce. Add some grated cheese for more flavor.
