This recipe is very similar to one of other recipes, Southwestern Pork Chops. The main difference in the recipe is we are using shrimp instead of boneless pork loin, and secondly, this recipe calls for zucchini, not black beans and diced tomatoes.
I am not a really big fan of spicy food, but I can tolerate, and I enjoy the flavor of chili powder. Chili powder is not very spicy, but it is just spicy enough to dress up a dish and make it less boring. If you enjoy spice food you can add all of the spice you would like to this dish.

How to Make Southwestern Shrimp
Preparing the Zucchini:
- In a large skillet melt 2 tbsp. of butter on medium heat. Next, add in the garlic and sauté until golden (about 2-3 minutes).
- Next, add in the zucchini, salt, and pepper and sauté for 10 minutes, mixing occasionally.
Preparing the Shrimp:
- While the zucchini is cooking, place the shrimp in a mixing bowl or bag and add the chili powder. Mix the shrimp thoroughly ensuring they are fully covered with the chili powder.
- In a skillet on medium heat, melt 2 tbsp. of butter. Next, add the shrimp and sauté the shrimp on both sides for 1 minute.
- Next, add the lemon juice and sauté the shrimp for another 2 minutes, mixing occasionally.
How to Serve Southwestern Shrimp
- Place a nice sized portion of the zucchini on a plate and dress with a few pieces of southwestern shrimp.
