Ingredients
12oz.shrimp
2medium zucchini sliced
4clovesof garlic sliced
4tbsp.butter
1tsp.chili powder
½tsp.salt
¼tsp.black pepper
Juice of 1 lemon
Instructions
Preparing the Zucchini:
In a large skillet melt 2 tbsp. of butter on medium heat. Next, add in the garlic and sauté until golden (about 2-3 minutes).
Next, add in the zucchini, salt, and pepper and sauté for 10 minutes, mixing occasionally.
Preparing the Shrimp:
While the zucchini is cooking, place the shrimp in a mixing bowl or bag and add the chili powder. Mix the shrimp thoroughly ensuring they are fully covered with the chili powder.
In a skillet on medium heat, melt 2 tbsp. of butter. Next, add the shrimp and sauté the shrimp on both sides for 1 minute.
Next, add the lemon juice and sauté the shrimp for another 2 minutes, mixing occasionally.
To Serve:
Place a nice sized portion of the zucchini on a plate and dress with a few pieces of southwestern shrimp.
