Notes

Invent Your Recipe:
This recipe, Stir Fry Vegetables with Quinoa, can really have endless possibilities. The combination of vegetables can be changed according to what you like. For instance, not everyone like peppers, so, you could substitute sun dried tomatoes or cherry tomatoes instead.
I have made may stir fry dishes so some other vegetables that I love to work into the mix are broccoli, cauliflower, eggplant, zucchini, carrots, peas, corn, spinach, swiss chard, and green beans, to name a few. Again, you can use many different types of vegetables, I suggest you try this dish first with your favorite vegetables, then make the dish again and try some new vegetables.
For the grain, I really enjoy quinoa. In this recipe the red quinoa add some really nice nutrition and color. However, use whichever grain you like, or even potatoes as the compliment to the stir fry vegetables. Some other grains I recommend are brown rice, wild rice, couscous, farro, and buckwheat.

Notes

Invent Your Recipe
In this recipe, stir fry cabbage with green beans, I am using a red onion for this recipe because I like the bolder flavor if provides compared to a traditional yellow or sweet onion. However, use whichever variety of onions you like. I think yellow, sweet, green, or even shallots would work well.
I added in the plum tomatoes for some additional color and flavor. You could also use fresh cherry tomatoes, canned diced tomatoes, or canned whole tomatoes cut up. Or leave out the tomatoes entirely. It is up to you and your taste buds.

Notes

Invent Your Recipe:
In this Healthy Cabbage Recipe (No Sugar Added) I am using fresh cherry tomatoes. For the tomatoes canned diced tomatoes will work as well. They are inexpensive and easy to use so I always recommend them in recipes. I have also used sun dried tomatoes, black olives, and roasted red peppers in this dish. I encourage you to try a variety of ingredients to pair with the eggplant and cabbage.
I am intentionally keeping this recipe sugar free by not adding any sweet sauces or sugar. The natural sugars from the vegetables provide a wonderful flavor when enhanced by the salt, ground black pepper, and sauce. However, if you want a little bit of a sweeter dish, add in your favorite stir fry sauce, teriyaki sauce, or favorite sweet sauce.
