Pork Stir Fry with Baby Carrots: A 30 Minute Recipe

Pork Stir Fry with Baby Carrots and Snow Peas. Boneless pork loin cut into thin strips and sautéed with garlic and stir fry sauce and served with baby carrots and snow peas. 

In this version we are snow peas, carrots, and stir fry sauce to create a wonderful and tasty pork stir fry with baby carrots dish. This series of recipes will feature pork cooked with stir fry sauce. What will change the most in these recipes are the complimentary ingredients. For instance, in the second version of this recipe, mixed vegetables are the main complimentary ingredients.

Pork Stir Fry with Baby Carrots

Pork Stir Fry with Baby Carrots and Snow Peas

Ingredients

  • 4 boneless pork chops cut into thin strips
  • 8 oz. baby carrots
  • 6 oz. snow peas
  • 4 cloves of garlic sliced
  • 2 tbsp. stir fry sauce
  • 2 tbsp. extra virgin olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup canola oil

Instructions

Preparing the Pork:

  • Cut boneless pork chops into strips and seasoned with salt and pepper. In a large skillet on high heat add the canola oil and pork and saute the pork on all sides until golden brown (about 5-7 minutes total).
  • Remove the pork from the skillet and drain the oil.

Preparing the Vegetables:

  • Return the skillet to medium heat and add in extra virgin olive oil. Next, add in the garlic and saute until golden (about 2 minutes), mixing occasionally.
  • Next, add in the carrots and snow peas and saute until tender, about 5 minutes, while mixing occasionally.

Bringing it all Together:

  • Return the pork to the skillet with the vegetables and add the stir fry sauce. Stir occasionally for 5 minutes to incorporate all the ingredients.

To Serve:

  • Serve the pork bites and vegetables over couscous or with a side of roasted potatoes.

Notes

Invent Your Recipe:
Having a bottle of stir fry sauce in the house if something I have done for a while. It is a quick way to jazz up a dish with sweet flavor. If you do not have stir fry sauce in the house you can use some soy sauce and honey for a sweet sauce.
Many vegetables would work in this dish as a replacement for the broccoli. I have used green beans, brussels sprouts, cabbage, asparagus, and peppers and onions in this dish one time or another. Let you imagination lead you toward your version of this recipe.

Pork Stir Fry Recipe: A Quick and Easy Dish

Pork Stir Fry Recipe. This version of the recipe includes broccoli, carrots, and cauliflower. The is a quick and easy dinner to make on a week night. For a time savings I recommend using a package of frozen mixed vegetables.

In this version, Pork Stir Fry Recipe, we are using mixed vegetables to change up this dish. This recipe is a very subtle change, as the first version of this recipe calls for snow peas and baby carrots. However, a small change like this really does make a completely different dish and eating experience.

Ingredients

  • 4 boneless pork chops cut into 1” cubes
  • 16-24 oz. Frozen package of mixed vegetables microwave ready
  • 2 tbsp. stir fry sauce
  • ¼ cup extra virgin olive oil
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ¼ tsp. garlic powder

Preparing the Pork:

  • Cut boneless pork chops into 1” cubes and place in a mixing bowl or bag. Next, add in the salt, pepper, and garlic powder and mix thoroughly.
  • In a large skillet add the oil and bring to high heat. Next, add in the pork and cook each side for 2 minutes (4 minutes total). Remove the pork from the skillet.

Preparing the Vegetables:

  • While the pork is cooking, place the bag of frozen vegetables into the microwave and cook for 1 less minute then the package describes.
  • Next, return the skillet to medium heat and add in the vegetables. Sauté for 2 minutes, mixing thoroughly.

Bringing it all Together:

  • Return the pork to the skillet with the vegetables and add the stir fry sauce. Stir occasionally for 5 minutes to incorporate all the ingredients.

To Serve:

  • Serve this quick pork stir fry over rice or with a side of roasted potatoes.

Notes

Invent Your Recipe:
In this recipe I am using frozen vegetables. I tend to use them during the week or when I do not have the time to prepare fresh vegetables. You can use fresh vegetables in this recipe. If you do, add them to the skillet after removing the pork and sauté them until they are tender (5-7 minutes). They continue with the recipe from there.
In terms of changes to this recipe, you can add in some spice with crushed red pepper flakes or cayenne pepper. The vegetable choice here is entirely yours; green beans, peas, peppers and onions, spinach, and asparagus would all work well with this recipe.

  • 1 Bag California vegetable medley 16-24 oz. frozen
  • 1 sweet onion sliced
  • ¼ cup avocado oil or canola oil
  • 2 tbsp. soy sauce
  • 2 tbsp. stir fry sauce
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ½ tsp. garlic powder

Preparing the Pork:

  • Season pork pieces with salt, black pepper, and garlic powder. In a large skillet add the oil and bring to a high heat.
  • Next, add the pork and sauté for 4 minutes, mixing occasionally.

Bringing it All Together:

  • Continuing on high heat, add in the onion and sauté for 2 minutes, mixing occasionally.
  • Next, add in the frozen vegetables and bring back up to a sauté. Cook for 5 minutes, mixing occasionally.
  • Next, add in the stir fry sauce and soy sauce and cook for 5 minutes, mixing occasionally, or until the vegetables are tender.

To Serve:

  • Mix this pork stir fry with California medley with rice and serve as a main entrée.

Notes

Invent Your Recipe:
In this recipe I am using a bag of frozen California vegetable medley to make things quicker and easier. You can definitely use fresh vegetables, however, that will change the steps to this recipe a bit.
To use fresh broccoli, cauliflower, and carrots you will first need to cut the vegetables into similar size pieces. This will ensure the vegetables cook evenly. After the first part of the recipe, when you are preparing the pork, you will add the sliced onion and sauté for 2 minutes, then and the other vegetables to the skillet and sauté for 3-5 minutes, mixing occasionally, until the vegetables begin to get softer. You may need to add some more oil if the leftover oil from cooking the pork is not enough. After this step, continue on with the recipe.
If you are looking for an alternative to pork, I have also made this recipe with chicken pieces, steak pieces, and shrimp. If you want a vegetarian stir fry, remove the pork from this recipe and sauté up the vegetables with the rest of the ingredients. Better yet, add in some more vegetable like peppers, green beans, asparagus, spinach, or snow peas.
