The purpose of this blog is to demonstrate how a base recipe, in this case Pasta with Sausage, can create a new recipe with a few ingredient changes. Pasta with Sausage and Peas: Simple and Delicious

Pasta with sausage and peas. Sautéed sausage and peas mixed with penne pasta and finished with grated cheese.

In this version we are using peas, onions, and marinara sauce to create a wonderful and tasty pasta and sausage dish. This series of recipes will feature Italian sausage cooked with different types of pastas. What will change the most in these recipes are the complimentary ingredients. For instance, in the second version of this recipe, broccoli and onions are the main complimentary ingredients.

Sausage Peas Penne

Pasta with Sausage and Peas

Sauteed sausage and peas mixed with penne pasta and finished with grated cheese

Ingredients

  • 1 lb Penne
  • 16 oz. sweet sausage
  • 24 oz. marinara sauce
  • 1 bag frozen peas
  • 4 cloves of garlic sliced
  • 1 sweet onion sliced
  • 2 tbsp. cup extra virgin olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

Preparing the Penne:

  • Prepare the Penne according to the instructions on the package.

Preparing the Sausage:

  • While the Farfalle is cooking. Begin by cutting the sausage into 1/2 inch pieces. Next, in a large skillet on high heat add the extra virgin olive oil and saute the garlic until golden (about 2 minutes).
  • Reduce to medium heat and add in the sliced onion, salt, and pepper and saute for 2 minutes, mixing occasionally. Next, add in the sausage and saute for 5 minutes to brown, while mixing thoroughly and breaking up the sausage.

Bringing it All Together:

  • Continuing on medium heat add in the frozen peas and marinara sauce and cook for 5 minutes, mixing occasionally.
  • Finally, add in the cooked penne and cook for 2 more minutes, mixing occasionally to incorporate all of the ingredients.

To Serve:

  • Place the penne with sausage and peas in a large serving bowl and sprinkle with grated cheese.

Notes

Invent Your Recipe:
Pasta is so versatile, I just love to prepare it every which way, with lots of different ingredients and flavors. For this dish, I add marinara sauce to the recipe to enhance the flavors of the sausage and peas.
When you prepare this dish you can use many different vegetables instead of the peas. I have another dish similar to this where I am using broccoli.

Pasta with sausage and broccoli. Sautéed sausage and broccoli mixed with farfalle pasta and finished with red pepper flakes.

In this version, Pasta with Sausage and Broccoli, we are using broccoli and onions to change up this dish. This recipe is a very subtle change, as the first version of this recipe calls for peas and marinara sauce. However, a small change like this really does make a completely different dish and eating experience.

In this version we are using spinach, cannellini beans, white wine, and asiago cheese to change up this dish. With these ingredient changes this recipe offers a whole new eating experience.

  • Next, add the garlic and sauté until golden, about 1-2 minutes.
  • Next, add in the sausage and sauté for 5 minutes to brown, while mixing thoroughly and breaking up the sausage.

Brining it All Together

  • Continuing on medium heat add in the white wine, beans, salt, and black pepper. Bring to a simmer and cook for 5 minutes, mixing occasionally.
  • Finally, add in the cooked farfalle and spinach and cook for 2 more minutes, mixing occasionally to incorporate all of the ingredients. Top with the asiago cheese before serving.

To Serve:

  • Place the farfalle with sausage and spinach in a large serving bowl and top with asiago cheese.

Invent Your Recipe:
This is the second version of our pasta with sausage recipe. In this version we are using spinach, cannellini beans, white wine and asiago cheese as different ingredients. The first version of this recipe used broccoli and onions.
The first version of this recipe had a simpler flavor profile, with the sausage as the star, and the broccoli and pasta serving secondary roles. In the second version of this recipe, the sausage takes a backseat to the flavor of the white wine and asiago cheese.
Not a fan or asiago cheese? No worries, you can substitute your favorite cheese instead.
