While the farfalle is cooking, in a large skillet or pot add in the extra virgin olive oil and bring to a high heat. Next, add in the onions and carrots and sauté for 2 minutes, mixing occasionally.
Next, add in the zucchini, broccoli, green beans, salt, ground black pepper, and garlic powered and sauté for 10 minutes, mixing occasionally.
Next, add in the marinara sauce and mix well. Bring to a simmer and cook for 5 minutes, mixing occasionally. (Optional) For a creamy sauce add about 1/4 cup ricotta cheese.
Finally, add in the cooked pasta and cook for 2 minutes, mixing occasionally to incorporate all of the ingredients.
Serve the farfalle with vegetables with crusty Italian bread or with a side salad. For some added spice sprinkle some red pepper flakes.
