Ingredients
12jumbo shrimp cleanedor 16 large shrimp
1pintgrape tomatoes or 1 can (15 oz.) diced tomatoes drained
2tbsp.extra virgin olive oil
¼tsp.salt
pinchblack pepper
¼tsp.dried oregano
¼tsp.dried basil
pinchdried thyme
juice of 1 small lemon or 1-2 tbsp. lemon juice

Preparing the Shrimp
In a large skillet add the extra virgin olive oil and bring to a high heat.

Next, add in the tomatoes and sauté for 2 minutes, mixing occasionally.

Next, add in the shrimp, salt, black pepper, oregano, basil, and thyme.
Sauté for 2 minutes, mixing occasionally. Finally, add in the lemon juice and sauté for 1 minute while mixing.

To Serve:
Serve this lemon herb shrimp over your favorite pasta or with a side of vegetables.

Invent Your Recipe:For this lemon herb shrimp recipe, I am keeping the seasoning relatively simple, with oregano, basil, and thyme. For an even simpler solution, just use Italian seasoning, which will have these herbs with a few others like rosemary and marjoram. I prefer to pick the individual herb, however, the convenience of the Italian seasoning mix needs to be stated. For additional flavor I would recommend adding in some garlic, savory, scallions, or green onions.I picked grape tomatoes for this recipe because I was serving this lemon herb shrimp over pasta and I wanted the cooked down tomatoes to make a flavorful sauce. Canned diced tomatoes would work equally well if that is what you have on hand. You could also add in a green vegetable like peas, green beans, spinach, chard, or asparagus, for some additional color, flavor, and nutrition.Shrimp works well in this recipe, however, you could also use scallops, chicken, pork, and fillet of fish with these seasonings.
