Simple and Tasty Lasagna Roll Ups. Ricotta, mozzarella, and Romano cheese layered with ground beef, sauce, and lasagna noodles.

Lasagna is such a great comfort food and reminds me of Sunday dinners growing up as a kid. Lasagna is an efficient way to feed a large family or for hosting a party.

This recipe, lasagna roll ups, is the direct result of having extra lasagna noodles from making dinner for my family. I made a meat lasagna and used the leftover ingredients, ricotta, mozzarella, Romano cheese, ground beef, and marinara sauce, to make these roll ups. It is a fun way to use leftovers.

You can prepare lasagna a day or two in advance, or even the week before, and freeze it until you’re ready to cook. What are your favorite memories of food as a little kid?

How to Make Lasagna Roll Ups

  • Pre heat the oven to 350 degrees

Preparing the Pasta:

  • Follow instructions on package to cook the lasagna noodles. Be sure to stir occasionally to prevent the lasagna noodles from sticking together.
  • Strain pasta and rinse with cold water. Place noodles on parchment paper for easy assembly of the lasagna roll ups.

Preparing the Ground Beef:

  • While the lasagna noodles are cooking. In a large skillet on high heat add the ground beef, salt, pepper, and garlic powder.
  • Cook until ground beef is no longer pink, about 5-7 minutes, stirring occasionally. Remove ground beef to a bowl to cool.

Preparing the Cheese Mixture:

  • In a large bowl combine the Ricotta cheese, mozzarella cheese, and grated Romano cheese. Reserve 1/4 cup of mozzarella cheese and ¼ cup of grated cheese for the top of the lasagna.

Building the Lasagna Roll Ups:

  • In the bottom of a 9×13 baking pan or aluminum lasagna pan add 1 cup of marinara sauce and spread evenly.
  • Next, on a flat surface lay out the 12 cooked noddle’s and place 2 tablespoons of cheese mixture and 1 tbsp. of ground beef at one end of each noodle. Roll each noodle so that the cheese mixture is completely encased.
  • Place the 12 roll ups into the backing pan. Next, evenly spread the remaining marinara sauce over the roll ups and sprinkle with the remaining grated cheese.
  • Place the lasagna roll ups into a 350 degree oven and cook for 30-35 minutes until the roll ups are heated throughout.

Invent Your Recipe:

In this recipe I am using ground beef to add to the mixture. You could also use ground turkey, chicken, pork, or veal instead of the beef. If you want a vegetarian lasagna roll ups recipe, try adding some sautéed spinach for spinach lasagna roll-ups. Or, substitute zucchini slices for the lasagna noodles!

These meaty lasagna roll ups are delicious and have three types of cheese in them; ricotta, mozzarella, and Romano. You can choose which ever combination of cheese you like. Try asiago, parmesan, or even cottage cheese instead of the ricotta. Or, leave out the cheese altogether and add more vegetables to the mixture, like sautéed cabbage, for a more filling experience.
