Green Beans with Garlic and Tomatoes: A Great Side Dish Recipe

Green beans with garlic and tomatoes sauteed in extra-virgin olive oil. This is a great #meatlessmonday option. Couple this with your favorite grains, or maybe just a nice piece of crusty Italian bread for dipping!

I just love this dish! The crunch of the green beans, sweetness of the tomatoes, and savory taste of the garlic. What a great combination of flavor and texture!

OK, maybe that was a bit romanticized, but I like what I like, and hopefully you like this dish as well. One, because it is so easy to make, and two, because you can add this recipe to your rotation for years to come.

I usually make this vegetable dish as a side to accompany grilled chicken breasts or I mix it in with some pasta. Usually penne or rigatoni. Something with a nice bite and texture.

A few times I have made this green beans with garlic and tomatoes dish as an appetizer or small dish offering with some nice toasted Italian bread. The sauce left behind by the diced tomatoes, olive oil, and garlic is amazing with crunchy bread.

How to Make Green Beans with Garlic and Tomatoes

Preparing the Vegetables:

  • In a large skillet bring the olive oil to high heat. Next, add in the sliced garlic and sauté until golden, about 2-3 minutes.
  • Next, add in the green beans, salt, and pepper and sauté on medium until tender, about 5-7 minutes. Finally, add in the diced tomatoes and sauté on medium for 5 minutes.

How to Serve Green Beans with Garlic and Tomatoes

  • Serve as a side dish with chicken, pork, beef, or seafood, such as salmon, shrimp, or scallops.
  • Also, serve over pasta for a great vegetarian option.

Invent Your Recipe:

Green beans are a great vegetable. They work well with so many dishes and are great anytime of the year. I tend to make this recipe in the fall and winter time when it is colder. However, this dish is great at any time!

Ingredients
  

  • 16 oz bag of green beans
  • 1/2 cup extra virgin olive oil
  • 4 gloves of garlic sliced
  • 15 oz. can of diced tomatoes
  • 1 tsp. salt
  • ½ tsp. black pepper

Instructions

To Serve:
