Begin by cutting the salmon into bite sized pieces, about 6 pieces each
For each salmon piece, coat with egg and then dredge in the bread crumbs. Repeat this process until all of the salmon is breaded.
In a large skillet add the canola oil and bring to a high heat. Next, add in about half of the salmon pieces, ensuring not to crowd the skillet.
Deep fry salmon on both sides until golden, about 2 minutes per side (4-5 minutes total). Remove the salmon and set aside on paper towels to drain. Repeat this process until all of the salmon is fried.
