A few years back I wanted to reduce the amount of meat I was eating while incorporating more whole foods. I was searching for meatless meals that would fill me up while also satisfying my taste buds. Spaghetti squash fit that bill nicely. This roasted spaghetti squash recipe was a direct result of my whole foods journey.

This recipe does take some time, about and hour, so it might not be the best option for a busy weeknight meal. But if you do have the time, this roasted spaghetti squash will not disappoint. The garlic, butter, and onions used in this dish provide such a wonderful flavor. It will be difficult to not eat the entire spaghetti squash!

  • Begin by cutting the squash in half and cleaning out the seeds. Next, place the squash halves faced down on a baking sheet and add about 1/2 inch of water to the baking sheet.
