Quick and Easy Shrimp Scampi

Sautéed shrimp in butter, garlic, and white wine. Garlicky, buttery, and full of flavor.

In this version of the recipe we are pan searing the shrimp in a garlic butter sauce and serving with pasta to create a wonderful and tasty shrimp scampi dish. This series of recipes will feature shrimp cooked several different ways with a garlic butter sauce. For instance, in the second version of this recipe, the garlic butter sauce is prepared separately, poured over the shrimp, and then the shrimp is baked in the oven.

Ingredients

  • 2 lbs. extra-large shrimp shelled
  • 1 cups white wine
  • 1 stick of butter
  • Juice of 1 lemon
  • 4 gloves of garlic minced
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ¼ cup fresh parsley
  • ¼ cup Extra Virgin Olive Oil

Instructions

Preparing the Shrimp

  • In a large skillet add ¼ cup extra virgin olive oil and bring to medium heat.

  • Add the minced garlic and sauté until golden, about 1-2 minutes.

  • Next, add the shrimp and sauté for 2-3 minutes until the shrimp begins to turn pink.
    2 lbs. extra-large shrimp
  • Next, add the butter, white wine, lemon juice, salt, pepper, and fresh parsley. Bring to a simmer and cook for 5 minutes.
    1 cups white wine, 1 stick of butter, ½ tsp. salt, ½ tsp. black pepper, ¼ cup fresh parsley, Juice of 1 lemon

To Serve

  • Place shrimp on a bed of your favorite cooked pasta (recommend spaghetti or linguini). Pour of spoon the desired amount of sauce over the chicken. Garnish with fresh parsley.

Invent Your Recipe:
Don’t like shrimp? You can use the lemon, butter, garlic, and white wine sauce for other dishes. Try using the sauce on salmon and bake in the oven. Leave out the shrimp and use the sauce with pasta. If you like the sauce, try it with anything!

Baked Shrimp Scampi: A 35 Minute Recipe

Breaded shrimp, baked in a garlic butter sauce. Garlicky, buttery, and full of flavor. 

In this version of the recipe we are breading the shrimp, preparing the garlic butter sauce separately, pouring the sauce over the shrimp, and then baking the shrimp in the oven to change up this dish. This recipe is a subtle change, as the first version of this recipe calls for shrimp pan seared in the garlic butter sauce. However, a small change like this really does make a completely different dish and eating experience.

Ingredients

  • 12 oz. large shrimp
  • 1 stick of butter
  • 1 cup white wine optional
  • 4 gloves of garlic minced
  • 1 egg
  • ½ cup bread crumbs
  • 2 tbsp. fresh parsley or ½ tsp. dried parsley
  • ½ tsp. salt
  • ½ tsp. black pepper

Instructions

  • Pre-heat the oven to 375 degrees

Preparing the Sauce:

  • In a small-medium sauce pan melt the butter on medium heat. Next, add the garlic, salt, pepper, and parsley and bring to a simmer.
    1 stick of butter, 4 gloves of garlic, 2 tbsp. fresh parsley, ½ tsp. salt, ½ tsp. black pepper, 1 cup white wine
  • Reduce the heat to low and simmer for 5 minutes, mixing occasionally. When the sauce is finished remove from the heat.

Preparing the Shrimp:

  • While the sauce is cooking preheat the oven to 375 degrees. In a mixing bowl, add the egg and whisk to make an egg wash.

  • Next, peel, clean the shrimp, and place into the egg. In a second mixing bowl add the bread crumbs.
    ½ cup bread crumbs
  • Next, bread the shrimp by covering the shrimp in egg and then bread crumbs. Place the shrimp in a single layer on a baking sheet.

Bringing it Together:

  • Pour the warm sauce over the shrimp on the baking sheet, ensuring the sauce covers all of the shrimp.

  • Next, place the shrimp into the oven and bake for 15 minutes.

To Serve:

  • Place this baked shrimp scampi over angel hair pasta or serve with a side of roasted potatoes.

Notes

Invent Your Recipe:
Shrimp scampi is so simple and a great tasting dish. This garlic butter sauce will pair well will just about anything. Try it with chicken, pork, steak, or salmon.
If you decide to make this scampi with pasta, I would double the sauce recipe and use the garlic butter sauce on the pasta as well.
The first version of this recipe uses white wine as a main ingredient. In this version of the dish I left the white wine out. You can notice the difference without the wine, the taste is still wonderful, just less amazing. If you do decide to add in the white wine it will be 1 cup. Add the wine to the sauce after the butter has melted and then bring to a simmer. Continue on with the recipe from there.

Ingredients

  • 4 tablespoons butter
  • 4 cloves garlic sliced
  • 2 medium zucchinis shredded
  • 2 medium carrots shredded
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 12 ounces large shrimp cleaned
  • ¼ cup white wine
  • Juice of ½ lemon

Instructions

Preparing the Vegetables:

  • In a large skillet or pot add in the butter and melt on high heat. Next, add in the garlic and sauté for 2 minutes, mixing occasionally.
  • Next, add in the zucchini, carrots, salt, and ground black pepper and sauté for 2 minutes, mixing occasionally.

Bringing the Shrimp Zucchini Scampi Together:

  • Continuing on high heat, add in the shrimp, white wine, and lemon juice and sauté for 2-3 minutes, mixing occasionally, or until the sauce reduces by half.

How To Serve Shrimp Zucchini Scampi:

  • Serve this shrimp zucchini scampi over a bed of your favorite grain or pasta as a main entree.

Notes

Invent Your Recipe:
For this shrimp zucchini scampi dish, I am using zucchini and carrots as my vegetable of choice. However, you can really use any vegetable you like. I recommend eggplant, yellow squash, green beans, asparagus, spinach, broccoli, cauliflower or Brussel Sprouts. If you can shred or chop the vegetable into small pieces, it can be used in this recipe as written.
Instead of shrimp, you could also use scallops, boneless chicken pieces, boneless pork pieces, or sliced skirt steak. If switching out to poultry, pork, or beef I would add a few minutes on to the cooking time to ensure the meat is cooked through.
If you do not want to use white wine in this dish you can use seafood broth, chicken broth, vegetable broth, or water instead. In lieu of broth, you could also add in more butter or add olive oil. But this would also increase the fat and calorie content of the dish. I would recommend a broth as an alternative.
