Pasta with Sausage and Spinach: A 35 Minute Recipe

Welcome to the third recipe in our Pasta with Sausage series of recipes. In this version, Pasta with Sausage and Spinach, we are using spinach, cannellini beans, white wine, and asiago cheese to change up this dish. With these ingredient changes this recipe offers a whole new eating experience.

In my opinion sausage is very delicious. It has amazing flavor, which is a direct result of the fat content and calories of a serving. What I like to do with sweet Italian sausage is use a smaller amount of it as an ingredient with pasta dishes. I do this because it delivers wonderful flavor, while letting me manage the amount of fat and calories I am adding to the dish.

I am using 4 sausage links in this recipe, which equate to one per serving. If you want to reduce the fat and calories in the dish, I would recommend reducing the sausage to 2 links total. Remember, a little does really go a long way.

How to Make Pasta with Sausage and Spinach

Preparing the Farfalle:

  • Prepare the farfalle according to the package instructions for al dente.

Preparing the Sausage:

  • While the Farfalle is cooking. Begin by removing the sausage from the castings. Next, in a large skillet add the extra virgin olive oil and bring to high heat.
  • Next, add the garlic and sauté until golden, about 1-2 minutes.
  • Next, add in the sausage and sauté for 5 minutes to brown, while mixing thoroughly and breaking up the sausage.

Brining it All Together

  • Continuing on medium heat add in the white wine, beans, salt, and black pepper. Bring to a simmer and cook for 5 minutes, mixing occasionally.
  • Finally, add in the cooked farfalle and spinach and cook for 2 more minutes, mixing occasionally to incorporate all of the ingredients. Top with the asiago cheese before serving.

How to Serve Pasta with Sausage and Spinach

  • Place the pasta with sausage and spinach in a large serving bowl and top with asiago cheese.

Ingredients
  

  • 1 lb. farfalle
  • 4 links sweet Italian sausage
  • 12 oz. Spinach
  • 1 can cannellini beans 15 oz.
  • 4 cloves garlic sliced
  • 1 cup white wine
  • 2 tbsp. extra virgin olive oil
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 2 oz. asiago cheese slice or shredded

Instructions
 

Preparing the Farfalle:

  • Prepare the farfalle according to the package instructions for al dente.
