Invent Your Recipe:
For this recipe, lemon herb pork with tomatoes, I am using cherry tomatoes. You could also use cut up plum tomatoes or a can of diced tomatoes. If you do not like tomatoes, try roasted red peppers or sun dried tomatoes instead.
I have made this recipe before with chicken, beef, shrimp, and scallops. The cooking time will vary depending on the meat you use, but I can say the above proteins will work nicely in this dish.
If you are looking for some more flavor or spice, feel free to add in what you like. Try some red pepper flakes or chili powder. How about some peppers and onions to sauté with the dish? Use the ingredients that you have on hand or really enjoy.
