In a large skillet on medium heat add the butter and melt. Raise to high heat and add the pork, salt, and ground black pepper.
Sauté the pork on all sides until golden brown, about 7 minutes.
Bringing the Recipe Together:
Continuing on high heat, add in the garlic, tomatoes, basil, and oregano. Sauté for 5 minutes, mixing occasionally.
Finally, add in the lemon juice and sauté for 3 minutes, mixing occasionally.

Invent Your Recipe:For this recipe, lemon herb pork with tomatoes, I am using cherry tomatoes. You could also use cut up plum tomatoes or a can of diced tomatoes. If you do not like tomatoes, try roasted red peppers or sun dried tomatoes instead.I have made this recipe before with chicken, beef, shrimp, and scallops.
