Ingredients
4boneless pork chops cut into bit size pieces
1pintcherry tomatoes cut in half
4tbsp.butter
2clovesgarlic sliced
1tsp.salt
½tsp.ground black pepper
¼tsp.dried oregano
¼tsp.dried basil
Juice of one lemon or 1/4 cup lemon juice
Instructions
Preparing the Pork:
In a large skillet on medium heat add the butter and melt. Raise to high heat and add the pork, salt, and ground black pepper.
Sauté the pork on all sides until golden brown, about 7 minutes.
Bringing the Recipe Together:
Continuing on high heat, add in the garlic, tomatoes, basil, and oregano. Sauté for 5 minutes, mixing occasionally.
Finally, add in the lemon juice and sauté for 3 minutes, mixing occasionally.

Invent Your Recipe:For this recipe, lemon herb pork with tomatoes, I am using cherry tomatoes. You could also use cut up plum tomatoes or a can of diced tomatoes. If you do not like tomatoes, try roasted red peppers or sun dried tomatoes instead.I have made this recipe before with chicken, beef, shrimp, and scallops. The cooking time will vary depending on the meat you use, but I can say the above protein will work nicely in this dish.If you are looking for some more flavor or spice, feel free to add in what you like.
