In a large skillet add in the canola oil and bring to a high heat. Next, lower the heat to medium, add in the chicken, and pan sear the chicken thighs to golden brown on both sides (about 5 minutes per side).
Drain the oil from the skillet and add 2 tablespoons of butter and 2 tablespoons of honey. Sauté the chicken on medium heat in the honey butter sauce on both sides until the chicken retains a nice glaze (about 3-4 minutes a side)
Keep the potatoes simple, boil russet potatoes until fork tender. Then in a large bowl mash the potatoes while adding in some salt, pepper, butter, and milk. Continue to mix until you get your desired texture.
