Master Base Recipe: Chicken with Cannellini Beans (6 Ways)

The purpose of this blog is to demonstrate how a base recipe, in this case Chicken with Cannellini Beans, can create a new recipe with a few ingredient changes. First, we create a recipe, then we taste the recipe, then we change up the ingredients to develop a new recipe from the original recipe.

Why Chicken and Cannellini Beans?

This combination is the ultimate “blank canvas” for a home cook. Cannellini beans (also known as White Kidney Beans) are creamy, mild, and high in protein, making them the perfect partner for lean chicken breast. Because these ingredients have a neutral flavor profile, they can be “pivoted” into Italian, Mediterranean, or even Zesty flavors just by changing one or two complimentary ingredients.

Chef’s Tips for the Best Results

  • The Liquid Gold: When using canned beans for these recipes, don’t always drain the liquid! The “aquafaba” (the starchy liquid in the can) helps create a natural, silky sauce when simmered with the chicken and garlic.
  • Don’t Overcook the Breast: Since we are sautéing chicken pieces, they cook fast. Sauté them until just golden, then remove them while you simmer your vegetables and beans. Adding the chicken back at the very end keeps it juicy and tender.
  • Storage & Meal Prep: This base is a meal-prepper’s dream. You can cook a large batch of the chicken and beans with just garlic and salt, store it in the fridge for up to 4 days, and then transform it into the different versions below on Tuesday, Wednesday, and Thursday nights.

Welcome to the first recipe in our Chicken with Cannellini Beans series of recipes. In this version I am using diced tomatoes and cannellini beans to create a wonderful and tasty chicken dish. This series of recipes will feature chicken and cannellini beans cooked with different types of ingredients and methods.

What will change the most in these recipes are the complimentary ingredients. For instance, in the second version of this recipe, zucchini is added as a complimentary ingredient.

Chicken with Cannellini Beans and Tomatoes

Preparing the Chicken:

  • Begin by cutting the boneless chicken breasts into stripes. In a large skillet add in the canola oil and bring to a high heat.
  • Next, add in the chicken and sauté on all sides until golden brown, about 5-7 minutes total. Remove the chicken from the skillet and drain the oil.

Bringing it all Together:

  • Return the skillet to medium heat and add in the diced tomatoes, cannellini beans, salt, black pepper, and garlic powder.
  • Bring to a simmer and cook for 5 minutes, mixing occasionally.
  • Next, add the chicken back into the skillet. Bring to a simmer and cook for 5 minutes, mixing occasionally.

To Serve:

  • Serve the chicken with cannellini beans and tomatoes with a side of broccoli or another green vegetable.

Invent Your Recipe:
This dish is a staple in my house. The reason behind this; cannellini beans, diced tomatoes, and chicken breasts are always stocked in the kitchen. Another reason; this dish comes together in under 25 minutes and is very delicious, savory, and filling. I pair this chicken with cannellini beans and tomatoes dish with broccoli or another green vegetable and I have a balanced meal.
I enjoy boneless chicken breasts the most with this recipe, however, I have used boneless pork loin and London broil before as substitutes, and have been happy with the result. You could even use shrimp, scallops, or calamari if you wanted to make this a seafood dish. 
For the beans, you can pretty much use anything you like. I am not sure if I would like this dish as much with black beans, however they would technically work. I would recommend ked kidney beans, navy beans, garbanzo, or pinto beans as substitutes for the cannellini beans.
For the tomatoes, fresh diced plum tomatoes is always preferred by me, however, diced tomatoes are inexpensive and easy to use. I have also used sun dried tomatoes, black olives, marinated artichoke hearts, and roasted red peppers in this dish. I encourage you to try a variety of ingredients to pair with the chicken and beans.

  • Remove the chicken from the skillet.

Bringing It All Together:

  • Continuing on high heat, add in the garlic and sauté until golden, about 1-2 minutes.
  • Next, add in the zucchini and sauté for 2 minutes, mixing occasionally.
  • Next, add in the beans, tomatoes, salt, and black pepper. Bring to a simmer and cook for 2 minutes, mixing occasionally.
  • Finally, add the chicken back into the skillet, bring to a simmer, and cook for 5 minutes, mixing occasionally.

To Serve:

  • Place the chicken with zucchini and beans into a large serving dish or on top of brown rice.

Notes

Invent Your Recipe:
This dish has a wonderful combination of colors, flavors, and textures. It really is a fantastic eating experience.
I picked cannellini beans for this dish, however, you can pick your favorite beans instead. Red kidney, Navy, Garbanzo, Black, and Pinto beans will all work well. I used diced tomatoes because I had a can in the pantry. You could also use fresh tomatoes or sun dried tomatoes as well.
For the main protein aspect of this dish, boneless pork loin cut into pieces, shrimp, or scallops would work well.

Notes

Invent Your Recipe
In this recipe, chicken with cannellini beans and peas, I am using frozen peas that I saved from my garden. I recommend frozen peas because they will maintain their shape as you cook them. Peas in a can will be mushy and disappear in the dish. If you can find fresh peas you could use them in place of the frozen peas.
If you would like to substitute out the cannellini beans, pretty much any other bean will work. I have used kidney, navy, great northern, pinto, and black beans before. Black beans will change the look and flavor of the dish the most, so If you are looking to stay close to the way the dish looks in the picture, I would not substitute the black beans.
Sun dried tomatoes, diced tomatoes, or fresh cherry tomatoes would be a nice substitute for the roasted red peppers. I have used each of those combinations before and the dish turns out good.

Notes

Invent Your Recipe:
For this chicken with mushrooms and beans recipe, I am using cannellini beans because it is part of the base recipe. However, you can switch out the cannellini beans for another type such as kidney, navy, pinto, or great northern.
I kept this dish simple by using only 8 ingredients. However, feel free to add in more vegetables besides the mushrooms and tomatoes. To name a few, I recommend trying onions, peppers, asparagus, green beans, zucchini, eggplant, broccoli, carrots, and spinach.
The recipe is names chicken with mushrooms, but, like all my dishes use what you have in the house. This recipe will also work well with pork bites, beef bites, turkey bites, or shrimp.
