In a large skillet or pot, add in the olive oil and bring to a high heat. Next, add the garlic and sauté for 2 minutes, mixing occasionally.
Next, add the chicken and sauté on all sides until golden brown, mixing occasionally for 5-7 minutes.
Bringing it all Together:
Continuing on high heat, add the mushrooms, diced tomatoes, cannellini beans, salt, and ground black pepper to the skillet or pot.
Bring to a simmer and cook for 8 minutes, mixing occasionally, or until the thickness of the sauce is to your liking

Serve the chicken with mushrooms and beans with broccoli or another green vegetable. Also, add in your favorite grain like brown rice, quinoa, sorghum, or buckwheat.

Invent Your Recipe:For this chicken with mushrooms and beans recipe, I am using cannellini beans because it is part of the base recipe. However, you can switch out the cannellini beans for another type such as kidney, navy, pinto, or great northern.I kept this dish simple by using only 8 ingredients. However, feel free to add in more vegetables besides the mushrooms and tomatoes. To name a few, I recommend trying onions, peppers, asparagus, green beans, zucchini, eggplant, broccoli, carrots, and spinach.The recipe is names chicken with mushrooms, but, like all my dishes use what you have in the house.
