Ingredients
2boneless chicken breastsabout 1 lb. cut into pieces
4oz.roasted red peppers chopped
1cuppeas
1cancannellini beans 15oz
2clovesgarlic sliced
½cupricotta cheese
¼cupcanola oil
½tsp.salt
¼tsp.ground black pepper
Instructions
Preparing the Chicken:
Begin by cutting the boneless chicken breasts into pieces. In a large skillet add in the canola oil and bring to a high heat.
Next, add in the garlic and sauté until golden, about 1-2 minutes.
Next, add in the chicken and sauté on all sides until golden brown, about 5-7 minutes.
Bringing it all Together:
Continuing on high heat add in the cannellini beans (with liquid), roasted red peppers, peas, salt, and ground black pepper.
Bring to a simmer and cook for 8 minutes, mixing occasionally, or until the liquid has reduced by half.
Finally, turn off the heat, add in the Ricotta cheese, and mix well.
To Serve:
Serve the chicken with cannellini beans and peas with a side of broccoli or over pasta.

Invent Your RecipeIn this recipe, chicken with cannellini beans and peas, I am using frozen peas that I saved from my garden. I recommend frozen peas because they will maintain their shape as you cook them. Peas in a can will be mushy and disappear in the dish. If you can find fresh peas you could use them in place of the frozen peas.If you would like to substitute out the cannellini beans, pretty much any other bean will work. I have used kidney, navy, great northern, pinto, and black beans before. Black beans will change the look and flavor of the dish the most, so If you are looking to stay close to the way the dish looks in the picture, I would not substitute the black beans.Sun dried tomatoes, diced tomatoes, or fresh cherry tomatoes would be a nice substitute for the roasted red peppers. I have used each of those combinations before and the dish turns out good.
