2boneless chicken breasts cubed
2clovesof garlic sliced
2bell peppers sliced
2red onions slicedor sweet onions
¼cupavocado or canola oil
1tsp.salt
¼tsp.black pepper

Preparing Chicken:
In a large skillet add the oil and bring to a high heat. Next, add in the garlic and sauté until golden, about 1-2 minutes.
Next, add in the chicken pieces and sauté for 5 minutes, mixing occasionally.
Bringing Everything Together:
Continuing on high heat, add in the peppers, onions, salt, and black pepper.
Sauté for 10-15 minutes, mixing occasionally, or cook until the peppers are tender.
To Serve:
Place in a large serving dish or on top of brown rice.
Notes
Invent Your Recipe:For this recipe I am using red and yellow bell peppers and red onions. I love the color the red and yellow peppers bring to the dish and I am also a fan of the bold flavor of the red onions. I have made this dish with green bell peppers and sweet yellow onions, so if that is what you prefer, I can attest to the outcome.Peppers and onions with garlic is a nice combination of sweet, savory, and bold flavors. I love this combination of vegetables and have used this recipe with boneless pork chops and sirloin or London broil steak cut into bit size pieces. If you enjoy other vegetable, add them as well. But just be cautioned, if you are using the red onion, you might not taste every vegetable you add.
