Southwestern Pork Chops: An Easy One-Pan Dinner Recipe

This southwestern pork chops recipe was a fun one for me to make. Boneless pork chops were on tap for dinner, and I was looking for something a little different. I usually grill, bake, or pan sear boneless pork chops that I have marinated or I seasoned with Italian herbs. But how many times can you do that before it gets boring. Don’t get me wrong, the pork chops are always juicy and taste great, but the same food over-and-over again gets boring, in my opinion.

I am not a really big fan of spicy food, but I can tolerate, and I enjoy the flavor of chili powder. Chili powder is not very spicy, but it is just spicy enough to dress up a dish and make it less boring. In this recipe I am using the chili powder twice; once to season the boneless pork chops directly, and a second time to season the vegetables. I like to use the chili powder this way so the entire dish has a balance of flavor.

If you just season the pork chops with chili powder, and not the vegetables, the pork chops will have great flavor, and the vegetables will taste good, but will not have the chili powder flavor. The same is true in reverse. If you just flavor the vegetables with the chili powder they will have great flavor, and the pork chops will be bland.

One thing I love about there southwestern pork chops, and I hope you do as well, is that the whole recipe is made in one skillet. That is such a plus for a recipe. A one-pot or one-pan recipe is a time saver and usually less complicated of a recipe to make.

How to Make Southwestern Pork Chops

Preparing the Pork:

  • In a bowl or plastic bag add the pork chops and 1 tsp of chili powder and mix well. Set aside.
  • In a large skillet on medium heat melt the butter.
  • Next, add the pork chops and pan sear on both sides until golden brown (about 3 minutes each side). Remove the pork from the skillet and set aside.

Preparing the Vegetables:

  • Return the skillet to medium heat and add in the garlic and sliced onion and sauté for 5 minutes, mixing occasionally.
Add in the black beans and diced tomatoes
  • Next, add in the diced tomatoes, black beans, salt, pepper, and 1 tsp of chili powder and sauté for 5 minutes, mixing occasionally.

Bringing it all Together:

  • Return the pork to the skillet and sauté for 5 minutes, flipping the pork chops half way through.

How to Serve Southwestern Pork Chops

  • Serve the southwestern pork chops with a side of rice or roasted potatoes.

Ingredients
  

  • 4 boneless pork chops
  • 1 can 15oz black beans
  • 1 can 15oz diced tomatoes
  • 1 sweet onion sliced
  • 4 garlic cloves sliced
  • 2 tsp chili powder
  • 2 tbsp. butter
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  • Serve the southwestern pork chops with a side of rice or roasted potatoes.

You can make these pork chops as spicy as you would like. Just play with the amount of spice until you are happy. Maybe add in some red pepper flakes, cayenne pepper, or fresh diced jalapeno peppers.
Chicken breasts would be a great substitute for this dish if you are not a fan of pork chops. Cook time would be about the same for the chicken.

Invent Your Recipe:

As I mentioned above I am not a fan of a lot of spice in my food. With that said, you can make these southwestern pork chops as spicy as you would like. Just play with the amount of spice until you are happy. Maybe add in some red pepper flakes, cayenne pepper, or fresh diced jalapeno peppers. That is the great thing with a simple recipe; the base of the recipe does not change, but the hints of herbs and spices can change to fit your pallet.

Chicken would be a great substitute for this dish if you are not a fan of pork chops. I have used boneless chicken breasts before with this recipe and I can tell you they turned out great. Cooking time would be about the same for the chicken if it is the same thickness as the pork chops. If they chicken is thicker, add some more time, if the chicken is thinner, knock some time off of the cook time.
