Ingredients
4boneless pork chops
1can15oz black beans
1can15oz diced tomatoes
1sweet onion sliced
4garlic cloves sliced
2tspchili powder
2tbsp.butter
1/2tsp.salt
1/4tsp.black pepper
Instructions
Preparing the Pork:
In a bowl or plastic bag add the pork chops and 1 tsp of chili powder and mix well. Set aside.
In a large skillet on medium heat melt the butter.
Next, add the pork chops and pan sear on both sides until golden brown (about 3 minutes each side). Remove the pork from the skillet and set aside.
Preparing the Vegetables:
Return the skillet to medium heat and add in the garlic and sliced onion and sauté for 5 minutes, mixing occasionally.
Next, add in the diced tomatoes, black beans, salt, pepper, and 1 tsp of chili powder and sauté for 5 minutes, mixing occasionally.
Bringing it all Together:
Return the pork to the skillet and sauté for 5 minutes, flipping the pork chops half way through.
To Serve:
Serve the southwestern pork chops with a side of rice or roasted potatoes.
Notes
Invent Your Recipe:You can make these pork chops as spicy as you would like. Just play with the amount of spice until you are happy. Maybe add in some red pepper flakes, cayenne pepper, or fresh diced jalapeno peppers.Chicken breasts would be a great substitute for this dish if you are not a fan of pork chops. Cook time would be about the same for the chicken.
