Sautéed Zucchini with Garlic: A 22 Minute Recipe

Sautéed Zucchini with Garlic. Zucchini sautéed in extra virgin olive oil with garlic. Delicious, quick, healthy, and the perfect side dish.

This is such a tasty and filling vegetable. I love to make this recipe frequently as a side dish with dinner during the week because it does not take very long to prepare.

When preparing to make this recipe I recommend cutting the zucchini into cubes. It is important to try and cut the zucchini into the same sized cubes, this will make for a more consistent and even cook. If the zucchini cubes vary in thickness, they will cook to different tenderness. I have done this before and the thinner cubes will fall apart while the thicker cubes will remain a bit hard and not very tender.

I usually wash and then leave the skin on the zucchini because I love the way it makes the dish taste and look. You can of course remove the skin if you prefer. If you do that, I recommend reducing the cooking time, otherwise you run the risk of the zucchini falling apart. Just keep and eye on the zucchini as it sautés and maybe cut about 2-3 minutes off the total cooking time.

  • In a large skillet or pot, add in the extra virgin olive oil and bring to a high heat.
  • Next, add in the garlic and sauté until the garlic is golden, about 2 minutes.

  • Lower to a medium heat and add in the zucchini, salt, and pepper, and sauté until tender, about 8-10 minutes, mixing occasionally.

How to Serve Zucchini with Garlic

  • Serve this zucchini with garlic with chicken, pork, or steak. For a vegetarian option, serve this zucchini over pasta.
