What do you do when you have a lot of cherry tomatoes? Roast them in the oven with some onions. This roasted tomatoes and onions recipe is a wonderful and healthy side dish option to pair with a main entree for dinner.

I have also cooked the dish, let it cool, and put the vegetables over some toasted bread like bruschetta.

Another option for this roasted tomatoes and onions recipe is to cook the vegetables and then blend them together to make a sauce. Then mix with your favorite pasta for a healthy vegetarian pasta dish.

How to Make Roasted Tomatoes and Onions

  • Pre-heat the oven to 400 degrees.

Preparing the Vegetables:

  • In a mixing bowl or plastic bag combine all of the ingredients.
  • Mix well and place onto a baking pan. The below picture shows you what the dish looks like before roasting.

For additional flavor you can add some herbs, such as oregano, thyme, or rosemary to this roasted tomatoes and onions recipe. I decided to keep this recipe simple because I love the flavor of tomatoes and red onions on their own.

Cherry or grape tomatoes work well in this dish, and I especially like the little “pop” of the tomato when you bite into it. However, I have made this recipe with cut up plum, or whole slicer tomatoes, as well.

Not a fan of tomatoes? Try roasting peppers, zucchini, eggplant, beets, carrots, kohlrabi, or potatoes instead. The sky really is the limit for the type of vegetables you can add to this roasted dish.

  • 10 ounces cherry tomatoes or grape tomatoes
  • 2 small red onions sliced thick or sweet onions
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons fresh basil sliced optional
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
