Last weekend I got a fantastic deal on some boneless pork loin at the grocery store. It was near the sell by date so the store had marked it down. I love when I have a find like this! I brought the boneless pork loin home and got right to cutting it up. From the one pork loin I was able to get 12 boneless pork chops, and a few pounds of stew meat.
I typically trim off the dark meat from the pork loin and use that for stew meat. I portioned everything into servings of 4 and froze what I wasn’t going to use right away.
A few days later (today), I defrosted some of the stew meat and created this recipe. I needed a simple and quick meal since it was a week night and I was tired from a full day at the office. I was configuring a few new Windows servers and had some issues with deploying the image across our network. I won’t get into the specifics, but let me just say, it is always the simple things that seem to cause the most problems when it comes to technology!
Anyway, when I got home I was tired and hungry, and wanted to eat as soon as possible. I looked through the pantry for what would work with the pork stew meat and what would also be quick to prepare. I grabbed a jar of salsa, a can of black beans, one really large sweet potato, one sweet onion, and got to work on this pork with salsa and sweet potatoes dish. Twenty-five minutes later dinner was on the table.

INSTRUCTIONS – Pork with Salsa and Sweet Potatoes
Preparing the Pork:
- Start by seasoning the pork with salt, black pepper, and garlic powder.
- In a large skillet add the canola oil and bring to a high heat. Next, add in the pork and cook for 1 minute on each side (2-3 minutes total).
- Next, add in the onion, and sweet potatoes, and cook for 5 minutes, mixing occasionally.
- Next, add in the black beans and salsa. Bring to a simmer, and cook for 5 minutes, mixing occasionally. After the 5 minutes, check one of the pieces of sweet potato to make sure it is tender. If not, add in some additional cooking time. 1-2 additional minutes should do the trick.
To Serve:
- Serve the pork with salsa and sweet potatoes with your favorite green vegetable.

Ingredients
- 1 lb. pork stew meat
- 1 sweet onion diced
- 1 large or 2 medium sweet potatoes cubed
- 1 15oz. can black beans
- 16 oz. salsa
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. garlic powder
- 1/4 cup canola oil

For this dish, pork with salsa and sweet potatoes, we are adding sweet potatoes and black beans in with the pork and salsa. I love using salsa to season dishes because it is easy, flavorful, and does not add many calories.
I made this dish, pork with salsa and sweet potatoes, with a side of Brussel sprouts because that is what I had in the house. However, use which ever green vegetable is your favorite, or that you have on hand. For a more filling dish, serve this on top of brown rice or quinoa.
As I mentioned at the top of the post, for this pork with salsa and sweet potatoes recipe, I used some stew meat that I had cut up the week before and put in the freezer. If you do not want to use stew meat, you can use boneless pork loin or boneless pork chops cut up into cubes, or you can just use boneless pork chops and leave them whole. If you do not want to use pork at all, this recipe will work well with cut up boneless chicken breasts as well.
