Preparing the Pork:
Start by seasoning the pork with salt, black pepper, and garlic powder.
In a large skillet add the canola oil and bring to a high heat. Next, add in the pork and cook for 1 minute on each side (2-3 minutes total).
Next, add in the onion, and sweet potatoes, and cook for 5 minutes, mixing occasionally.
Next, add in the black beans and salsa. Bring to a simmer, and cook for 5 minutes, mixing occasionally.
After the 5 minutes, check one of the pieces of sweet potato to make sure it is tender. If not, add in some additional cooking time. 1-2 additional minutes should do the trick
To Serve:
Serve the pork with salsa and sweet potatoes with your favorite green vegetable.
Notes
Invent Your Recipe:This is the first version of the pork with salsa recipe. There are a few chicken and salsa dishes we have shared already. You can find them on our invent your chicken recipe page, or our recipe archive page. For this dish, we are adding sweet potatoes and black beans in with the pork and salsa. I love using salsa to season dishes because it is easy, flavorful, and does not add many calories.I made this dish with a size of Brussel sprouts because that is what I had in the house. However, use which ever green vegetable is your favorite, or that you have on hand. For a more filling dish, serve this on top of brown rice or quinoa.
