I like to make this dish during the week for dinner. Setup everything in the baking pan, set the timer, and let the pork tenderloin and vegetables roast away.

To save some time, you could chop the vegetable the night before and store them in the refridgerator. Then, at dinner time the next day, add them to the baking pan with the pork tenderloin and place in the over; 45 minutes later dinner is ready. What an easy pork tenderloin recipe to make.

How to Make Pork Tenderloin In Oven Recipe

  • Preheat the oven to 400 degrees

Preparing the Sauce:

  • In a small bowl add the water, teriyaki sauce, soy sauce, dried oregano, garlic powder, and ground black pepper. Stir well to incorporate all the ingredients

Preparing the Pork Tenderloin:

  • In the center of a 9×13 baking pan place the pork tenderloin. Next, place the chopped vegetables around the pork tenderloin to fill in the remaining area of the pan. Next, drizzle the sauce over the pork and vegetables.

  • 2-3 medium sweet potatoes cut into cubes
  • 2 medium zucchini chopped
  • 3 tbsp. water
  • 2 tbsp. teriyaki sauce

If using beets, I would recommend boiling them for about 5 minutes before adding then to the recipe. It will make them softer for roasting in the oven.
Instead of zucchini you could use another vegetable, such as, green beans, broccoli, asparagus, or eggplant, to name a few. I have used green beans, broccoli, and asparagus before so I know those substitutes work well.
