Choose tender pork, your favorite vegetables, and a sweet sauce for a delicious and healthy meal.
I like to make this dish during the week for dinner. Setup everything in the baking pan, set the timer, and let the pork tenderloin and vegetables roast away.
To save some time, you could chop the vegetable the night before and store them in the refridgerator. Then, at dinner time the next day, add them to the baking pan with the pork tenderloin and place in the over; 45 minutes later dinner is ready. What an easy pork tenderloin recipe to make.

Invent Your Recipe:
In this recipe, pork tenderloin in oven, I am using sweet potatoes and zucchini to pair with the pork. If you do not want to use sweet potatoes, you could also use carrots, red potatoes, beets, or turnips. If using beets, I would recommend boiling them for about 5 minutes before adding then to the recipe. It will make them softer for roasting in the oven.
Instead of zucchini you could use another vegetable, such as, green beans, broccoli, asparagus, or eggplant, to name a few. I have used green beans, broccoli, and asparagus before so I know those substitutes work well.
Instead making a sauce, you could just use a premade marinade from a bottle or BBQ sauce for this pork tenderloin in oven recipe.
