Ingredients
1Pork Tenderloin1.5-2 lbs.
2-3medium sweet potatoes cut into cubes
2medium zucchinichopped
3tbsp.water
2tbsp.teriyaki sauce
2tbsp.soy sauce
1tsp.dried oregano
1tsp.garlic powder
1/2tsp.ground black pepper
9x13 baking pan
Aluminum foil
Instructions
Preheat the oven to 400 degrees
Preparing the Sauce:
In a small bowl add the water, teriyaki sauce, soy sauce, dried oregano, garlic powder, and ground black pepper. Stir well to incorporate all the ingredients
Preparing the Pork Tenderloin:
In the center of a 9x13 baking pan place the pork tenderloin. Next, place the chopped vegetables around the pork tenderloin to fill in the remaining area of the pan. Next, drizzle the sauce over the pork and vegetables.
Roasting the Pork Tenderloin:
Cover the baking pan with aluminum foil and place into the oven to roast for 30 minutes.
After 30 minutes, remove the cover, mix the vegetables, and roast for another 15 minutes (uncovered), or until the internal temperature of the pork is 165 degrees.
To Serve:
Serve the pork tenderloin in oven recipe, as the main entree with a side salad, or over quinoa, buckwheat, or brown rice.
Notes
Invent Your Recipe:In this recipe, pork tenderloin in oven, I am using sweet potatoes and zucchini to pair with the pork. If you do not want to use sweet potatoes, you could also use carrots, red potatoes, beets, or turnips. If using beets, I would recommend boiling them for about 5 minutes before adding then to the recipe. It will make them softer for roasting in the oven.Instead of zucchini you could use another vegetable, such as, green beans, broccoli, asparagus, or eggplant, to name a few. I have used green beans, broccoli, and asparagus before so I know those substitutes work well.Instead making a sauce, you could just use a premade marinade from a bottle or BBQ sauce for this pork tenderloin in oven recipe.
