Simple Pork Taco Recipe with Roasted Peppers and served on flour tortillas. Red bell peppers roasted in the oven and served in a flour tortilla with sautéed pork bites.

This recipe is refreshed from an older post that did not look too good. The images were blurry so I decided to take new photos and re-post the recipe.

This dish came about one night when trying to get my daughter interested in something other than chicken nuggets, pizza, or French fries. I think she was about 2 years old when I made these pork tacos for the first time.

She liked to eat flour tortillas and I had made some roasted peppers and pork bites for dinner. So I just put them together and she was excited to try them. And it worked! She ate 1 piece of pork and then mostly tortillas, but hey, a win is a win.

She is five now and still loves to eat tacos!

How to Make this Pork Taco Recipe With Roasted Peppers

  • Pre-heat the oven to 400 degrees.

Preparing the Peppers:

  • Clean and cut the bell peppers into slices. On a large baking sheet place the pepper slices and season with salt and pepper.
  • Next, drizzle on the extra virgin olive oil and mix the peppers to ensure they are coated.
  • Bake at 400 degrees for 20 minutes, or until the pepper skins begin to brown.

Preparing the Pork:

  • While the peppers are cooking, in a large skillet bring the canola oil to high heat.
  • Next, add the pork and season with salt, pepper, and garlic powder. Sauté the pork on all sides until golden brown (about 5-7 minutes total) and drain the excess oil.
  • Finally, after the oil is drained, add the lemon juice, and continuing on high heat, sauté the pork for 2 more minutes.

How to Serve this Pork Taco Recipe with Roasted Peppers

  • To serve this pork taco recipe with roasted peppers place the pork pieces in the center of a flour tortilla and top with a few roasted peppers. Add a spoonful of sour cream if desired.

  • 4 boneless pork chops cut into bite size pieces
  • 4 bell peppers sliced
  • 8 small flour tortillas
  • 1/2 tsp. salt for pork
  • 1/4 tsp. black pepper for pork
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 cup canola oil
  • Juice of one lemon 1/4 cup
  • 2 tbsp. extra virgin olive oil
  • Pinch salt for peppers
  • Pinch black pepper for peppers
  • Sour Cream for serving
