Bake at 400 degrees for 20 minutes, or until the pepper skins begin to brown.

While the peppers are cooking, in a large skillet bring the canola oil to high heat.
Next, add the pork and season with salt, pepper, and garlic powder. Sauté the pork on all sides until golden brown (about 5-7 minutes total) and drain the excess oil.
Finally, after the oil is drained, add the lemon juice, and continuing on high heat, sauté the pork for 2 more minutes.
Bringing it all together:
Place the pork pieces in the center of a flour tortilla and top with a few roasted peppers. Add a spoonful of sour cream if desired.
