Ingredients
4boneless pork chops cut into bite size pieces
4bell peppers sliced
8small flour tortillas
1/2tsp.salt for pork
1/4tsp.black pepper for pork
1/4tsp.garlic powder
1/4tsp.onion powder
1/4cupcanola oil
Juice of one lemon1/4 cup
2tbsp.extra virgin olive oil
Pinchsalt for peppers
Pinchblack pepper for peppers
Sour Cream for serving
Instructions
Pre-heat the oven to 400 degrees.
Preparing the peppers:
Clean and cut the bell peppers into slices. On a large baking sheet place the pepper slices and season with salt and pepper.
Next, drizzle on the extra virgin olive oil and mix the peppers to ensure they are coated.
Bake at 400 degrees for 20 minutes, or until the pepper skins begin to brown.
Preparing pork:
While the peppers are cooking, in a large skillet bring the canola oil to high heat.
Next, add the pork and season with salt, pepper, and garlic powder. Sauté the pork on all sides until golden brown (about 5-7 minutes total) and drain the excess oil.
Finally, after the oil is drained, add the lemon juice, and continuing on high heat, sauté the pork for 2 more minutes.
Bringing it all together:
Place the pork pieces in the center of a flour tortilla and top with a few roasted peppers. Add a spoonful of sour cream if desired.
