Simple and Tasty Lemon Garlic Chicken Bites. Boneless chicken bites sautéed in a lemon garlic butter sauce and served with zucchini and pasta.

I love quick weekday meals that I can whip up after a long day of work. These lemon garlic chicken bites do just the trick. Preparing this chicken is super easy and straight forward; just season with salt and pepper, pan fry the chicken, then sauté in the sauce until it thickens.

The high heat of the oil and butter gives the chicken a crispy exterior and a juicy and tender interior. For even more crunch you can coat the chicken is flour or breadcrumbs before frying these lemon garlic chicken bites.

How to Make Lemon Garlic Chicken Bites

Preparing the Chicken:

  • Season chicken pieces with salt and pepper. In a large skillet on high heat sauté the sliced garlic in canola oil until golden brown, about 1-2 minutes.
  • Next, add the chicken pieces and 2 tablespoons of butter. Sauté on all sides until the chicken is golden brown, about 5-7 minutes total. If needed, add the additional 2 tablespoons of butter.
  • Finally to finish these lemon chicken bites, add in the lemon juice and sauté for 2 minutes, mixing occasionally.

Ingredients
  

  • 4 boneless chicken breasts cut into bite sized pieces
  • 2 garlic cloves sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1/4 cup canola oil
  • 2-4 tablespoon butter
  • juice of one lemon or 1/4 cup lemon juice

    Hi! This is Kat, Tom’s wife! I made this recipe tonight and it turned out great! I am a very slow prepper, so the prep time was a bit longer for me. I was hesitant about using a quarter cup of lemon juice, but it worked out really well and gave the chicken just the right amount of flavor! Next time, I will be sure to mix it evenly and sauté for another minute or so in order to really spread out the lemon flavor. I cooked a little zucchini with the chicken, and that may have been my favorite part! I did roasted potatoes and green beans as the sides…yum! Great recipe, babe!
