In a large skillet add the canola oil and bring to high heat. Next, add the garlic and sauté until golden, about 1-2 minutes.
Next, add the chicken pieces and 2 tablespoons of butter. Sauté on all sides until the chicken is golden brown, about 5-7 minutes total. If needed, add the additional 2 tablespoons of butter.
Finally, add in the lemon juice and sauté for 2 minutes, mixing occasionally.
To Serve:
Place in a large serving dish or on top of brown rice or pasta, and paired with a vegetable.

Invent Your Recipe:This recipe is a quick way to prepare flavorful chicken that can be paired with a starch and vegetable. My favorite combinations are pasta or rice, with, broccoli or zucchini.Potatoes also work well as a pairing with this chicken. Baked russet potatoes, bakes or mashed sweet potatoes, or roasted red bliss or fingerling potatoes.There is very little prep for this dish, but if you would like to add some texture to the chicken an do not mind a few more minutes of work, dredge the chicken in flour before adding to the hot oil and butter. This will produce a little coating for the chicken that will soak up some more of the lemon butter sauce.
