Fried Pork Chops with Broccoli. Boneless center cut pork chops coated with breadcrumbs and egg and then fried to perfection.

Fried Pork chops can be tricky to cook because they easily become dry and chewy. When I am making boneless pork chops I will do one of two things. I will either buy already prepared boneless pork chops, which I make sure are at least 1 inch thick, or I will buy a boneless pork loin and cut the chops to the thickness I want.

My preferred option is to buy the boneless pork loin. I prefer to this method for two reasons: one, the price per pound of the pork is usually less expensive, and two, I get to trim the fat and pick the thickness of my cut. A third bonus reason to buy the boneless pork loin is that, if you buy a larger one (from the money saved by not buying the boneless pork chops already cut), you get more pork, which can be used for more dishes. With this extra pork I will typically cut more chops, or cut the pork into cubes for stir fry or stew.

Fried Pork Chops Recipe

In this fried pork chops with broccoli recipe, I cut the pork chops myself from the full loin, which helps to keep the pork chops tender and juicy. I then prepare an easy seasoning and coat the pork chops. Next, I heat some oil and cook the fried pork chops.

How to Make Fried Pork Chops with Broccoli

Preparing the Easy Pan Fried Pork Chops:

  • In a bowl add 2 cups of plain bread crumbs and season with salt, pepper, and garlic powder to make the seasoning for fried pork chops. In another bowl add 2 eggs and whisk.
  • For each pork chop, coat with egg and then dredge in the bread crumbs. Next, in a large skillet on high heat fry pork chops in ¼ cup of canola oil until golden brown on all sides (about 2-3 minutes a side).
  • Remove the crispy pan fried pork chops from skillet and drain the oil.

Bringing the Recipe Together:

  • Return the skillet to high heat and sauté 2 cloves of garlic in 2 tablespoons of extra virgin olive oil until golden brown.
  • Once the garlic begins to turn golden brown, reduce to medium heat and add 2 cups of broccoli florets sauté for 3-5 minutes until broccoli is tender.

How to Serve Fried Pork Chops with Broccoli

  • Serve these breaded fried pork chops with broccoli with a side of brown rice or potatoes

For best results ensure the boneless pork chops are at least 1 inch in thickness. Otherwise, you run the risk of a dry chewy pork chop.

This recipe, easy fried pork chops with broccoli, would also work well with chicken breasts. For juicy fried chicken breasts you use very similar steps. I recommend cutting the chicken breast in half lengthwise to form 2 chicken cutlets from 1 breast. Then you follow the same steps above for breading and frying the chicken.

Ingredients
  

  • 4 boneless pork chops
  • 2 cups plain breadcrumbs

  • 2 cups broccoli florets

Instructions

  • Once the garlic begins to turn golden brown, reduce to medium heat and add 2 cups of broccoli florets sauté for 3-5 minutes until broccoli is tender.

  • Pair a pork chop with a serving of broccoli. Add brown rice for a hearty meal.
