Easy Tortellini Dinner with Sweet Peas: A Simple Vegetarian Recipe

Jazz up a plain tortellini and sauce meal with sweet peas and grated cheese. This easy tortellini dinner takes only 30 minutes and is full of flavor. 

I just love pasta. All varieties of pasta. All different sizes and shapes. A recipe like this one is super easy and completely fulfills the craving for pasta!

How to Make Easy Tortellini Dinner

Preparing the sauce:

  • In a medium sauce pan bring the extra virgin olive oil to high heat.
  • Next, add in the garlic, onions, salt, and pepper and sauté until the garlic is golden brown and the onions soften (about 2-3 minutes).
  • Lower to medium heat and add in can of tomato sauce. Bring to a simmer and cook for 20 minutes.
  • Next, add in the frozen peas and simmer for 10 minutes.

Preparing Tortellini:

  • While the sauce is simmering prepare the tortellini according to the instructions.

How to Serve Easy Tortellini Dinner

  • Place the tortellini in the center of a bowl and spoon over the desired about of sauce. Finish with a sprinkle of grated cheese to taste.

Invent Your Recipe:

I enjoy marinara sauce on pretty much any dish. I make it all the time and keep it on hand stored in mason jars. A recipe like this one, which incorporates marinara sauce as the base, is very easy to make if you already have the sauce on hand. If this is true, add the frozen peas and simmer for 10 minutes until the peas are cooked.

If you do not have marinara sauce, follow the above recipe which guides you through a quick scratch sauce. It does not have all the layers and flavors of my Sunday gravy, but is perfect with this easy tortellini dinner.

Ingredients
  

  • 1 package of tortellini
  • 1 package of frozen peas
  • 28 oz. can of tomato sauce or puree
  • 1 small sweet onion diced
  • 2 cloves of garlic minced
  • 1/2 tsp. of salt
  • 1/4 tsp. of black pepper
  • 2 tbsp. extra virgin olive oil
  • grated cheese to taste
