In a medium sauce pan add the extra virgin olive oil and bring to high heat.

Next, add in the garlic, onions, salt, and pepper and sauté until the garlic is golden brown and the onions soften (about 2-3 minutes).

Lower to medium heat and add in can of tomato sauce. Bring to a simmer and cook for 20 minutes.

Next, add in the frozen peas and simmer for 10 minutes.

Preparing Tortellini:
While the sauce is simmering prepare the tortellini according to the instructions.

To Serve:
Place the tortellini in the center of a bowl and spoon over the desired about of sauce. Finish with a sprinkle of grated cheese to taste.

Invent Your Recipe: I enjoy marinara sauce on pretty much any dish. I make it all the time and keep it on hand stored in mason jars. A recipe like this one, which incorporates marinara sauce as the base, is very easy to make if you already have the sauce on hand. If this is true, add the frozen peas and simmer for 10 minutes until the peas are cooked.If you do not have marinara sauce, follow the above recipe which guides you through a quick scratch sauce.
