I especially love the smell; and how that wonderful peppers and onions aroma fills the whole kitchen and house. However, I know that aroma is not for everyone, take my wife as a prime example.

Preparing Chicken:
- In a large skillet add the oil and bring to a high heat. Next, add in the garlic and sauté until golden, about 1-2 minutes.
- Next, add in the chicken pieces and sauté for 5 minutes, mixing occasionally.
Bringing Everything Together:
- Continuing on high heat, add in the peppers, onions, salt, and black pepper.
- Sauté for 10-15 minutes, mixing occasionally, or cook until the peppers are tender.
How to Serve Chicken with Peppers and Onions
- For a gluten free option, place the chicken with peppers and onions in a large serving dish
- Alternatively, serve on top of brown rice.

For this chicken with peppers and onions dish I am using red and yellow bell peppers and red onions. I love the color the red and yellow peppers bring to the dish and I am also a fan of the bold flavor of the red onions. I have made this dish with green bell peppers and sweet yellow onions, so if that is what you prefer, I can attest to the outcome.
Peppers and onions with garlic is a nice combination of sweet, savory, and bold flavors. I love this combination of vegetables and have used this recipe with boneless pork chops and sirloin or London broil steak cut into bit size pieces. If you enjoy other vegetable, add them as well. But just be cautioned, if you are using the red onion, you might not taste every vegetable you add.
