Simple Chicken Veggie Pasta Recipe. Full of flavor, healthy vegetables, and delicious baked chicken. 

This dish, chicken veggie pasta, consists of baked boneless chicken breasts, ziti, broccoli, carrots, diced tomatoes, black olives, garlic, and other seasonings. I love how the flavors come together with this chicken veggie pasta recipe. The dish does not call for a lot of seasoning, I like to let the healthy ingredients shine on their own. However, feel free to add in some of your favorite seasonings or spices.

Chicken Veggie Pasta Recipe

To cut some cooking time off this chicken veggie pasta recipe I recommend using leftover chicken breasts, or preparing the chicken breasts the night before, or over the weekend when you have more time. It will cut about 30 minutes off of the cook time and make this dish a manageable weeknight meal option.

How to Make Chicken Veggie Pasta

  • Pre heat the oven to 400 degrees

Preparing the Chicken

  • Begin by seasoning the chicken breast with a pinch of salt and pepper and place on a baking sheet. If you would like more flavor, add a pinch of garlic powder and onion powder as well. Place in the over and cook at 400 degrees for 20 minutes.
    • Alternatively, you can grill or pan sear the boneless chicken breasts for this recipe. Choose the method you prefer, then slice the chicken and continue on with this chicken veggie pasta recipe.
  • Remove the chicken from the oven and let the chicken rest for 5 minutes. Next, slice the chicken into pieces.

Preparing the Pasta

  • While the chicken is cooking, prepare the pasta according to the package

Bringing the Recipe Together

  • In a large skillet on high heat add the olive oil and sliced garlic. Cook until the garlic is golden in color (about 2 minutes). Next, add in the broccoli and carrots and sauté for 5 minutes, mixing occasionally.
  • Lower the heat to medium and add in the diced tomatoes, black olives, and chicken stock. Sauté for 5 minutes, mixing occasionally.
  • Next, add in the sliced chicken and sauté for 5 minutes, mixing occasionally.
  • Finally, add in the cooked pasta and sauté for 5 minutes, mixing occasionally.

How To Serve Chicken Veggie Pasta

  • Serve the chicken veggie pasta in a large family style bowl and sprinkle with grated cheese.
  • Additionally, serve the chicken veggie pasta with a side salad or another vegetable .

Pasta is so versatile and works with so many combinations of ingredients. This chicken veggie pasta recipe uses some of my favorite vegetables, but that does not mean you have to use those vegetables in this recipe.

Choose your own combinations. In addition to tomatoes, maybe add in some spinach, broccoli rabe, or peppers and onion. There really are endless possibilities of vegetables to pair with the chicken in this dish.

Instead of chicken, you could also use ground beef, turkey bites, pork bites, steak bites, shrimp, or scallops in this recipe.

Ingredients
  

  • 4 chicken breasts boneless
  • 1 lb Ziti
  • 2 tbsp olive oil
  • 2 cups broccoli florets
  • 2 cloves garlic sliced
  • 1 can diced tomatoes 15 oz. or fresh diced tomatoes
  • 1 can black olives 2 oz.
  • 2 medium carrots sliced
  • 1 cup chicken stock or broth
  • salt to taste
  • pepper to taste

Instructions
 

  • Pre heat the oven to 400 degrees

Preparing the Chicken

  • Season the chicken breast with a pinch of salt and pepper and place on a baking sheet. Place in the oven and cook at 400 degrees for 20 minutes or until the chicken has reached an internal temperature of 170 degrees

  • Remove the chicken from the oven and let the chicken rest for 5 minutes. Next, slice the chicken into bite-size pieces.

Preparing the Pasta

  • While the chicken is cooking, prepare the pasta according to the package
    1 lb Ziti

Bringing it All Together

  • In a large pot or skillet on high heat add the olive oil and sliced garlic. Cook until the garlic is golden in color (about 2 minutes).
    2 tbsp olive oil, 2 cloves garlic
  • Next, add in the broccoli, carrots, and a pinch or salt and pepper. Sauté for 5 minutes, mixing occasionally.
    2 cups broccoli florets, 2 medium carrots
  • Next, add in the cooked chicken, diced tomatoes, black olives, and chicken stock. Bring to a simmer and then cook for 5 minutes, mixing occasionally.
    1 can diced tomatoes, 1 can black olives, 1 cup chicken stock or broth
  • Finally, add in the cooked pasta and saute for 5 minutes, mixing occasionally.
