This recipe was the result of an over-abundance of blueberries. I had more blueberries in the house than could be eaten before they spoiled, so blueberry chicken was on tap.
Blueberry chicken recipe. Chicken breasts sautéed in a sweet blueberry sauce and served with broccoli and white rice. The blueberry sauce is just 3 simple ingredients and reduced nicely into a sweet glaze for the chicken.
I have to admit, this was the first time I made blueberry glaze from fresh blueberries. I kind of just winged it. That is really the whole point of this blog, just grab the ingredients and go for it. I didn’t really know the exact amount of time it would take to make the sauce before I started cooking it. I just added in the blueberries, sugar, and chicken stock and simmered until the sauce was to my liking. It took about 15 minutes.
If you like a really thick glaze, I would simmer the sauce longer, until it reduces to the thickness you like. If you are looking for more of a sauce, or basically, “hot whole blueberries”, only simmer the sauce for a few minutes. The great part about this glaze is there are only 3 ingredients, so it is easy to play with the measurements and cooking time, until you are happy with the results.

How to Make Blueberry Chicken
Preparing the Blueberry Sauce:
- In a medium pot add in the blueberries, sugar, and chicken stock and bring to a boil.
- Lower the heat and simmer for 15 minutes, mixing occasionally.
Preparing chicken:
- Season chicken with salt, pepper, and garlic powder. In a large skillet on high heat add in the canola oil and sauté chicken until golden brown on both sides (about 4 minutes a side).
- Drain the oil from the skillet and return to medium heat. Add the blueberry sauce to the skillet and saute the chicken for 5 minutes on each side (10 minutes total) allowing the sauce to reduce.
How to Serve Blueberry Chicken:
- Serve this blueberry chicken with a side of broccoli and over white or brown rice.

- 4 chicken breasts
- ½ cup blueberries
- ¼ cup sugar
- ¼ cup chicken stock or water
- ½ tsp. salt
- ¼ tsp. black pepper
- ½ tsp. garlic powder
- ¼ cup Canola oil for chicken

This blueberry sauce is just so wonderful and sweet. I have made this glaze several times and can tell you that it will work well with pork and lamb. The sweetness and tanginess of the blueberries pairs well with fattier cuts of pork and lamb.
