As recipes go, this baked chicken and cherry tomatoes recipe is simple to prepare and requires a low amount of effort. Something I was looking for on this particular evening because my mind was tired from work.
Grab the ingredients, give some vegetables a rough chop, throw everything into a pan, and bake away. About 40 minutes later a healthy dinner is ready.
While the baked chicken was cooking I used that time to recharge with some rough-housing with my kids. They love jumping all over their dad!

How To Make Baked Chicken and Cherry Tomatoes:
- Pre-heat the oven to 375 degrees
Preparing The Baked Chicken and Tomatoes:
- In the baking pan, evenly space the chicken breasts. Next, surround the chicken breasts evenly with the tomatoes, sweet potatoes, onions, garlic, and fresh basil.
- Season everything with salt and ground black pepper. Next, evenly drizzle the extra virgin olive oil over the chicken and vegetables.

- Finally, place the dish into the oven and bake for 40 minutes at 375 degrees, or until the chicken has reached an internal temperature of 165 degrees.

How To Serve Baked Chicken and Cherry Tomatoes:
- Let the baked chicken breast rest for 5 minutes before serving. Slice the chicken breasts into 1/2-inch slices and serve with the vegetables on the side.
- I also served this baked chicken over some quinoa. This is optional of course, but adding your favorite grain (rice, quinoa, bulgur wheat, farro) adds some bulk to the dish.

Invent Your Recipe
For this recipe, baked chicken and cherry tomatoes, I chose fresh cherry tomatoes, sweet potatoes, and onions for the vegetables. This recipe can work with all kinds of vegetables, including, white potatoes, asparagus, Brussels sprouts, and butternut squash, to name a few.
For added flavor, I decided to use fresh garlic instead of garlic powder. No reason in particular, maybe I just felt like peeling and chopping garlic today. Either way, fresh or dried garlic works well for flavor. If going with the garlic powder use about 1/2 -1 teaspoon.
I had fresh basil on hand and used that for the seasoning. Dried basil is fine as well. If choosing it, use about 1 teaspoon. Like always, in the spirit of inventing your version of this recipe use whatever herbs you like. Try oregano, savory, sage, marjoram, or rosemary.
Use the combination of seasonings you prefer. Even try some spice, like chili powder, cayenne pepper, or jalapeños to change the experience of this dish altogether.
