This recipe is a take on our zucchini with tomatoes and onions recipe. In this version of the recipe we are adding in green beans and removing the onions. Your will notice from the pictures of this recipe that the green beans are flat and wide. This variety is an Italian flat bush bean that I grow in my garden. I love the sweet flavor of this green bean, however, this is not commonly found in the store. This recipe will work with any type of green bean.
I favor diced tomatoes because they are quick, simple, and have some nice flavor. If you prefer fresh tomatoes that is great. Also, think about using sun dried tomatoes in this dish. The bold flavor is a great complement to the sweetness of the zucchini and green beans.
