1medium zucchini sliced
2cupsgreen beans
1can15 oz. diced tomatoes15 oz. diced tomatoes
2clovesgarlic sliced
2tbsp.extra virgin olive oilor canola oil
1/2tsp.salt
1/2tsp.black pepper
Instructions
Preparing the Zucchini
In a large skillet add the extra virgin olive oil and bring to a high heat. Next, add in the garlic and sauté until golden, about 1-2 minutes.
Next, lower to a medium heat and add in the green beans. Sauté for 5 minutes, mixing occasionally.
Next, add in the zucchini and sauté for 2 minutes, mixing occasionally. Next, add in the diced tomatoes, salt, and black pepper.
Finally, bring to a simmer and cook for 5 minutes, mixing occasionally.
To Serve:
Serve the zucchini and green beans as a side dish with chicken, pork, or steak. For a vegetarian option, serve this dish over pasta.

Invent Your Recipe:This recipe is a take on our zucchini with tomatoes and onions recipe. In this version of the recipe we are adding in green beans and removing the onions. Your will notice from the pictures of this recipe that the green beans are flat and wide. This variety is an Italian flat bush bean that I grow in my garden. I love the sweet flavor of this green bean, however, this is not commonly found in the store. This recipe will work with any type of green bean.I favor diced tomatoes because they are quick, simple, and have some nice flavor. If you prefer fresh tomatoes that is great. Also, think about using sun dried tomatoes in this dish. The bold flavor is a great complement to the sweetness of the zucchini and green beans.
