Begin by cleaning the zucchini and cutting off the ends. Next, cut the zucchini is half length-wise and scoop out the flesh in the middle. Set the scooped-out zucchini aside to use later in the recipe.
Next, place the zucchini on a baking sheet and drizzle with 1 tbsp. of canola oil. Rub in to ensure the tops of the zucchini are fully covered with canola oil.
Place in the oven and bake at 400 degrees for 25 minute. Remove from the oven and set aside.
Preparing the Turkey Stuffing:
While the zucchini is baking, place a large skillet on high heat. Next, add the remaining 2 tbsp. of canola oil and bring to a high heat.
Add the garlic, onion, scooped out zucchini, salt, and ground black pepper and sauté for 5 minutes, mixing occasionally.
Next add the ground turkey and sauté for 5 minutes, mixing occasionally.
Finally, add in the diced tomatoes and sauté for 5 minutes, mixing occasionally.
Finishing the Zucchini Boats with Ground Turkey
Spoon the turkey stuffing into the middle of the zucchini boats. Next, sprinkle the shredded mozzarella on top of the zucchini, ensuring all of the zucchini boats are evenly covered.
Finally, place the zucchini boats into the oven and bake at 400 degrees for 10 minutes, or until the cheese is melted and golden in color.

Serve the zucchini boats with ground turkey as the main entrée and pair with your favorite grain.

Invent Your Recipe:For this recipe, zucchini boats with ground turkey, I am using ground turkey for the stuffing. I have also made this recipe with ground beef, ground chicken, shredded chicken, and pulled pork. Feel free to try any of these ingredient ideas. Zucchini is a great vegetable for stuffing, however, you could also make this recipe with yellow summer squash, eggplant, peppers, large tomatoes, acorn squash, or butternut squash.
