In a large skillet on medium heat add in the ground turkey. Sauté for 7 minutes, mixing occasionally to break up the meat.
Remove the turkey from the skillet and return the skillet to medium heat.
Preparing the Vegetables:
Continuing on medium heat, add in the garlic and sauté until golden, about 1-2 minutes.
Next, add in the onion and zucchini and sauté for 2 minutes, mixing occasionally.
Next, add in the frozen vegetables, salt, and black pepper, and sauté for 5 minutes, mixing occasionally.
Next, add in the diced tomatoes and sauté for 2 minutes, mixing occasionally.
Bringing it All Together:
Finally, add the ground turkey back into the skillet and sauté for 5 minutes, mixing occasionally to ensure the ingredients are incorporated and not sticking to the skillet.
If adding in the fresh mozzarella do so at this point. Remove the skillet from the heat, add the fresh mozzarella, mix, and then serve.
To Serve:
Serve this turkey hash with mixed vegetables with a sunny side egg or with roasted potatoes.

In fact, I get on these kicks where all I want to eat are different combinations of ingredients in the form of turkey hash, chicken hash, ground beef hash, or pulled pork hash. These recipes are really great for using up leftover ingredients that you have from making other main dishes. All those odds and ends are perfect additions to a hash recipe.For this recipe I am using ground turkey. I made a turkey chili a few days before and had some ground turkey leftover so I decided to us it in this dish. I have also made this recipe with ground beef, ground chicken, ground pork, and pulled pork.For the vegetables I had 1 zucchini leftover in the refrigerator and a bag of frozen vegetables in the freezer. I combined them with a can of diced tomatoes to make up the main part of this turkey hash with mixed vegetables dish. I have also used sweet potatoes, potatoes, broccoli, peas, corn, eggplant, and green beans in this recipe. Basically if you like a certain vegetable or have leftover vegetables in the house, use them in this recipe.You do not need to add the cheese to this hash recipe. I had the fresh mozzarella in the refrigerator so I used it. Feel free to leave out the cheese, or use a different cheese entirely.
